| As the fermentation and ripening of Mosto, from Coratina olives, takes place in underground rock cisterns, the oil is refined through a gentle filtration system. The result is a naturally filtered green colored oil called Vivace. It has a strong fruity scent, recommended to be served as a finishing accent or in light sauté cooking.
